In a recent game of LNoE, we could not find reference to the weapons break and ammo rolls in the rule book. I search on the site and didn't seem to find anything referencing it either. So I was wondering are these rolls seperate from the attack or shooting rolls, or do you take the rolls for the attack for the weapon break/ammo roll? Thanks for the help.

It depends on the weapon. For the shotgun, it's its own roll. For the pistol, they're one in the same. Each weapon card specifies the break condition for it. The baseball bat is a good one to see for an example of a hand weapon that has a break check. Each time you use it (which *can* be multiple times in one fight!), you roll to see if it breaks. If it hasn't broken, you can use it again!
